SUMMARY: The overall responsibility of a General Manager is overseeing and coordinating the planning, organizing, training, and leadership necessary to achieve stated objectives in sales, costs, and profitability. - Ensure that guest service complies with company standards.
- Ensure that food is prepped, cooked, and plated according to company standards.
- Purchase all food from authorized sources using company required procedures.
- Monitor utilities, supplies, and other cost categories to minimize impact.
- Analyze Profit and Loss statements and take appropriate corrective action.
- Follow proper procedures and specifications in preparation and serving of food products.
- Control inventory through established inventory systems.
- Use approved labor guidelines and develop labor schedules in advance.
- Adjust labor to changes in sales volume.
- Ensure food safety practices comply with company standards and local Health Department regulations.
- Keep Regional Manager informed of hiring, promotions, and changes in employee status.
- Process payroll accordingly.
- Maintain applicant tracking as per federal requirements.
- Achieve financial objectives regarding sales, food cost, labor cost, and other controllable costs.
QUALIFICATIONS:
- High School or GED; some college preferred; Previous restaurant experience desirable.
- No one under the age of 21 is allowed to be a Manager.
- Must be ServSafe certified.
COMMUNICATION SKILLS:
- Ability to demonstrate excellent written and oral communication skills.
- Ability to listen to understand other points of view before responding.
MATHEMATICAL SKILLS:
- Understanding of P & L analysis, Cash Controls, Labor Analysis, Yields, and calculating food costs (theoretical vs. actual).
REASONING ABILITY:
- Ability to solve problems and deal with a variety of complex issues common in the Food service business.
FLEXIBILITY:
- Handles day-to-day work challenges confidently.
- Ability to work a variety of shifts and times of day.
LEADERSHIP:
- Develops and grows others.
- Solicits and applies customer feedback.
- Improves processes, products, and services.
- Gains support and commitment from others.
COMPUTER SKILLS:
- Proficient in computer-based program systems.
- Proficient in Excel, Word, as well as the Internet.
LICENSE:
- Must have a valid driver’s license and current car insurance.
BACKGROUND CHECK:
- Candidates are required to pass a background check and drug test criteria.
APPEARANCE/UNIFORM:
- Complies with all company standards related to appearance and uniform standards.

Nathan Mast
Nathan Mast grew up in his parent’s and grandmother’s kitchen, he loved to cook and to help assist any way he could. His lifelong dream was to work as a chef or in a restaurant. After graduating with a degree in Restaurant Management, he began his managing career during the brew pub boom of the early 2000s in a full-service brew pub restaurant and lounge. He quickly rose through the ranks to become the corporate beverage manager of the company’s two locations.
From there, he moved on to be the lead hospitality and beverage manager of the newly built local casino where he thrived in the high pace environment, focused on training and service. Nathan then took his expertise to Philadelphia to assist in the opening of their new casino on the waterfront where he utilized the great experience of the Sands Casino opening to help guide the team to a successful opening and first year.
Finally, Nathan relocated back to the Lehigh Valley to be closer to family and work for one of the upcoming (to the area) casual sports bar restaurants where he spent the next almost 10 years opening new locations, becoming a corporate training store on 3 separate occasions, and running a top store in the company.
Nathan is looking forward to using his ability to build trusting relationships with his team and utilizing the knowledge and experience he has gathered throughout his 21 years in the hospitality business to become a successful recruiter. In his spare time, Nathan is a huge Philadelphia sports fan, loves to be in the kitchen and when the weather cooperates, enjoys playing golf and any outdoor sport.
