Title of Position: Kitchen Manager
Job Description:
The Kitchen Manager will be held accountable for all back of the house functions of the restaurant. All dishes will be created according to recipe and presented according to high standards put in place by the Kitchen Manager. Maintaining a sanitary and well-organized kitchen will be the function of the Kitchen Manager. Ensuring compliance with all company policies as well as state health and safety regulations will be the responsibility of the Kitchen Manager as well. The Kitchen Manager will also guarantee that the culinary staff remains aware of new menu item preparation and presentation by constantly training and developing the team. Back of the house, administrative functions such as product ordering, food inventory, and culinary staff scheduling will also be the responsibility of the Kitchen Manager.

Qualifications:

  • This position requires a minimum of 2 years’ experience as a Kitchen Manager in a high volume environment
  • A true desire to mentor and develop others is a trait the Kitchen Manager must possess
  • A solid track record in achieving financial results is a must for the Kitchen Manager
  • The Kitchen Manager must live by a guest orientated philosophy and show honesty and integrity in all things
  • Open availability is a requirement for the Kitchen Manager

Craig brings 27 years of restaurant operations experience to the table, ranging from family style to upscale dining. Craig has served on training, opening, menu & kitchen development teams for multiple concepts. Beginning as a server out of high school with Copper Cellar’s Calhoun’s, Craig worked his way to Kitchen Manager within three years. After relocating to South Carolina, Craig served as Kitchen Manager, General Manager and Corporate Chef of Café Enterprises Fatz Café. Craig acted as Steward of Greenville’s award winning City Range Steakhouse Grill for 5 years before being recruited to run a new upscale catering company, where he acted as both General Manager and Sous Chef. Following a move to Georgia with his family, Craig worked at Atlanta’s very own TacoMac- a high volume casual dining concept- where he served as Kitchen Manager, Manager and Corporate Trainer for over six years.
