Research and Development Executive Chef - Hospitality Company
The R&D Chef will work directly with the Executive team, the VP of Food and Beverage, and R&D team to bring new and innovative dishes to the menu while also optimizing and enhancing existing recipes. This person will be expected to dive in as an active and vocal participant in the ideation process around new food dishes for our menus. This role requires a passion for food & health, creativity, a keen focus on detail, and overall organization. Unbridled passion for food and a solid base understanding and appreciation of a wide variety of cuisines and healthy food genres (i.e. fresh, plant-based, paleo, etc.)
Ingredient sourcing and shopping for development needs.
Daily cooking to provide technical culinary expertise in assigned projects and verticals
Participate in all stages of product development
Monitor and consistently research culinary trends
Ensure that nutritional guard rails and other criteria are maintained in the development process
Knowledge of costing such that products are developed within a targeted cost range
Contributes to the seamless transition of recipes and other related data between the R&D and Production teams
Excellent time management skills with the ability to multi-task, prioritize and meet deadlines
Attention to detail with a direct communication style
Scope of Responsibilities:
Active and vocal representative in product tastings and trials of new products
Continuously helps set the gold standard for culinary innovation
Ability to be flexible in work assignments, and switch gears as needed
Participates in brainstorming and collaborative conversations about food, health trends, and techniques
Meticulous attention to detail while recording all tests and pertinent analytical information
Ensures proper food temperatures are maintained and food is stored correctly
Keeps workstation and equipment clean, organized, and sanitized
Follows and upholds all health codes and sanitation regulations
Understands and operates basic kitchen equipment.
Performs other ad hoc duties assigned.
Basic knowledge of the Microsoft Office (i.e. Word & Excel) and Google apps (i.e. Docs & Sheets)
Minimum of two years of formal culinary training or commensurate experience; minimum of two years of culinary preparation experience; minimum of two years of culinary experience.
Experience in a similar foodservice operation with similar duties and responsibilities.
Experience in healthy cooking techniques.
Self-starter, motivated by working in a kitchen.
Excited about testing and experimenting with new food ingredients and cooking techniques.
Experience working in a computer network environment utilizing Microsoft Word and Excel programs.
ServSafe certification or ability to acquire
