Title of Position: Restaurant General Manager

Job Description: The Restaurant General Manager will work side by side with the Proprietor in managing the three management responsibilities: People, Sales, and Profits. This person’s main focus will be developing our front-of-house staff, but will still assist the Proprietor in recruiting, training and developing all Team Members and will ensure they are treated with respect and will contribute to the decisions of hiring and terminating employees. The Restaurant General Manager will help build sales through service, and will follow through with sales growth plans both inside and outside the restaurant. The person in this position will be involved in all P & L aspects of the restaurant by managing all food, labor and beverage costs while ensuring quality and service standards are upheld.

Qualifications:

  • Previous Restaurant Operations experience
  • Strong communication skills, verbal and written
  • Strong interpersonal skills, able to communicate with all levels of the corporation
  • Ability to maintain a calm and professional demeanor during periods of uncertainty or crisis
  • Ability to be organized in a changing environment

Craig brings 27 years of restaurant operations experience to the table, ranging from family style to upscale dining. Craig has served on training, opening, menu & kitchen development teams for multiple concepts. Beginning as a server out of high school with Copper Cellar’s Calhoun’s, Craig worked his way to Kitchen Manager within three years. After relocating to South Carolina, Craig served as Kitchen Manager, General Manager and Corporate Chef of Café Enterprises Fatz Café. Craig acted as Steward of Greenville’s award winning City Range Steakhouse Grill for 5 years before being recruited to run a new upscale catering company, where he acted as both General Manager and Sous Chef. Following a move to Georgia with his family, Craig worked at Atlanta’s very own TacoMac- a high volume casual dining concept- where he served as Kitchen Manager, Manager and Corporate Trainer for over six years.
